I have always loved eating Corned Beef and Cabbage on St. Patrick’s Day. My mom would make it annually and follow it up with a lime jello mold. YUM! Sadly, my hubby doesn’t share my affinity for boiled meats and spicy mustard. So when St. Patrick’s Day rolls around I always try to find a festive alternative to the standard.
