Today is my 2nd day not he Paleo Challenge and I feel great! crabby.  Yep, this afternoon the kids were acting a little bananas and I was starting to feel like a glass of wine would be my calgon moment, but I didn’t succumb.  Yet…  I mean they’re not asleep yet, so there’s still a chance.  

Anyway, I’d say my menu is actually going pretty well.  I loved yesterday and today’s food and I currently have leftovers in the fridge and in the freezer. Woohoo!  The first few days of any new plan are always the toughest, but the mistakes I’ve made before (like not having something around to eat in case I need to eat NOW) are not going to stop me this time.

Breakfast: Sausage and Butternut Squash Frittata

This frittata was gloriously showcased on Pintersted from Cook Eat Paleo.  It looked ah-mazing and I HAD to try it!  This morning I was super lucky to have some kiddos sleeping in which made it the perfect AM to make this.  Here are my thoughts… First of all, this was delicious!!!  Next, I chose to add basil because that’s what I had on hand.  I have a few more servings for leftovers which makes me very happy.  

So, I bought pre prepped butternut squash to make life easier and it was perfect because you have to brown the sausage and roast the squash prior to making the frittata.  I’ll take any shortcut I can get.  Also, I added 6 eggs instead of the suggested 3 because I wanted to have leftovers.  All in all, I was one happy lady!

Lunch: Chicken Tortilla Soup

This was another Pinterest winner!  Linda Wagner created a perfect warm and soothing soup for a rainy day like today!  WHEN I make this again (it was that good) I would not use shredded carrots again, I would def chop some fresh ones.  Also, I would add zucchini like they do at my fave place in the Ferry Building: Mijita.  And, I would totally up the spice level.  It was really flavorful, but def could have used another jalepeno or maybe just some added cayenne pepper.

Dinner: Taco Tuesday, Paleo Style

This one wasn’t exactly Insta worthy, but it’s reality.  This is a Taco Tuesday devoted family, so I had to keep with tradition.  The kiddos had theirs regular style but he hubs and I had ours in romaine lettuce.  They were ground turkey tacos and I love to make my own taco seasoning, here’s my recipe.  My plate didn’t look so fab, so I snapped Nick’s, but mine had cilantro, taco sauce, and celery.  Yes celery, don’t ask.  It’s my fave taco topping.

Up tomorrow: Baked Avocado Egg, soup leftovers, and Paleo fried rice.
