Paleo Plan Day 3

Wednesdays are always crazy busy mornings and days around our household.  Just lots of early morning running around and different pick up times and after school activity times.  Since I didn’t want that to get in the way of my Paleo Plan, I ate leftovers and picked up a healthy snack along the way to ensure I didn’t get derailed by hunger. Let’s talk leftovers, this plan I created includes lots of leftovers and things on hand to eat quick in case I’m starting to get “hungry”.  (Hard boiled eggs for example.) These are shortcuts that I know will work for me because I’m a total leftover lover.  So, when I made my lunch soups on Monday and Tuesday I portioned out the leftovers to make sure I had some on the fridge and some to put in the freezer.  Making full size recipes for just me means I have tons of leftovers for the rest of the few weeks.  This way I can cut down on costs, grocery store trips, and time.  Win win.

Breakfast:{Leftovers}Sausage & Butternut Squash Frittata

OMG, this was still soooooo good reheated.  Seriously, why have I never added fresh basil to my eggs before.  It was delish!  You can find the recipe in this post.

Snack: Edamame Cup with Citrus Salt

I picked this up at the Nordstrom’s Cafe as well as a cup of hot green tea.  If you are ever at a mall and starving but want something healthy, I totally recommend stopping by Nordy’s Cafe.  Not the sit down one, but the coffee bar one.  This was right next to the hard boiled eggs.  They also have fruit and other veggie options.  Easy and fast.  I actually ate this in my car.  Yum!

Lunch:{Leftovers}Creamy Tuscan Chicken Soup

This is definitely one of those recipes that just gets better a few days later.  I think all those delicious flavors get to know each other a little better.  It was perfect for the rainy, windy day.  You can find the recipe in this post.

Dinner: Paleo Spaghetti and Meatballs

I totally planned on making my Paleo fried rice last night, but the people spoke and they wanted spaghetti and meatballs.  So I followed this recipe from my friend Cam.  Ever since she shared this recipe with me, it has been a go-to for our family.  I made a few changes:

  • I changed out the turkey for ground beef because that’s what I had on hand.
  • I added some fresh basil because I had it from the frittata recipe.  
  • I used my have crockpot Marinara instead of the tomatoes.  You can find that recipe here.  Coincidentally that sauce happens to be Paleo, there’s no sugar, no olive oil, it’s just vegetables, tomatoes, and spices.  I always have several jars in my freezer.
  • I didn’t crock the meatballs.  I wish I had because it’s just so easy to do and I love coming home to a house that smells like an amazing Italian dinner!  Because I switched menus last minute I just threw them in the oven covered in my marinara sauce at 375° for 30 minutes covered, then uncovered for 15 minutes.  

I made the spaghetti squash the exact way Cam suggests in the recipe link and I gave the kids theirs with leftover Fettuccini noodles that I reheated.  Everyone was happy!  The only bummer: I don’t have a ton of leftovers.  

Up tomorrow: Baked Avocado Egg, a different lunch option, and Paleo fried rice.
