I’ve wrapped up my 4th day and I’m actually feeling pretty good about things.  The only thing I’ve missed is my wine, but other than that there has only been one other time where I contemplated licking the frosting off a cupcake.  So I’d say things are going well!  One disappointing thing is that I thought I would fall asleep faster and sleep sounder.  Unfortunately I’ve had a really hard time falling asleep the last two nights.  I’m hoping that changes.  Maybe my body is just getting used to not having carbs like bread and pasta?

Breakfast:{Repeat} Baked Avocado Egg with Bacon

This one was so nice that I had to make it twice!  This time around I made the hole for the egg larger so more of it was actually in the avocado as opposed to under it.  Healthy fats, bacon fat, and protein from the egg.  Pretty great breakfast.  You can see the original post here.

Lunch:{Leftovers}Chicken Tortilla Soup

I had the same experience with the soup as I did with the Tuscan one from the day before, they just get better in the fridge!  When I made my lunch soups on Monday and Tuesday I portioned out the leftovers to make sure I had some on the fridge and some to put in the freezer.  So you’ll be seeing more of this soup when I defrost it in the upcoming weeks.  See the original recipe here.

Dinner: “Teriyaki” Beef Stir Fry over “Fried Rice”

I’ve experimented with some “Fried Rice” dishes made with cauliflower rice in the past and it’s something I really enjoy.  The texture of the cauliflower is remarkably similar to rice and it really absorbs flavors.  Cauliflower rice is so versatile, I plan to use it in a ton of different ways moving forward.  The one issue I’ve had with it is the time it takes to make yourself and the mess you make on your kitchen.

Instead of making my own, I buy it at Trader Joe’s in the frozen section.  On occasion there is a shortage of this product due to an apparent cauliflower shortage that is supposed to last through January.  In other words, if you see it stock up!  I literally when in the other day and only bought 10 bags.  

Onto the recipe.  I followed this Teriyaki Beef Stir Fry recipe from Julie at PaleOMG (she’s kind of amazing ♥ ) pretty closely except I excluded the 2nd bell pepper and the mushrooms because my family would have picked those out anyway.  Instead, I added frozen peas and carrots.  I changed the way the recipe ended too.  After the meat was cooked (step 7), I set it aside in a bowl with the vegetables.  I added the last tablespoon of Arrowroot Flour to the meat drippings left in the pan and whisked until a thick sauce formed.  Then I added the frozen cauliflower rice to the pan and put the lid on for a few minutes.  Once the frozen cauli-rice was thawed I stir fried it for a few minutes.  My plate is pictured above.  But, I layered my hubby and kids plates differently.  Confession: I made them their own real fried rice.  So I plated their fried rice, topped with my fried cauli-rice, and topped that with the beef and veggie mixture.  Super delish!
