Paleo Plan Days 5-8

Over the weekend I ate a ton of leftovers, chicken breast, sweet potatoes, and nuts.  Those seem to be my go-tos.  I didn’t really want to cook anything too crazy and I wanted to clear out the fridge before I went shopping for the next week.  I did try out two new recipes and I’m featuring them here for you!

Brunch: Creamy, Bacony Spaghetti Squash Carbonara

Whenever I try out some new eating habits I feel like I start to crave all the things I’m not supposed to have.  So I decided to use up some already cooked spaghetti squash and bacon and transform it into something that seems like it would be off limits for Paleo.  Truth be told there is a small amount of Parm cheese in this dish, so it’s definitely not strict Paleo.  But, it was low carb, filling, and delicious!

I used this recipe from Hugs and Cookies XOXO.  I basically did 1/2 of everything and only 1/4 cup of the cheese.  I thought it was delicious, although next time I would add a fried egg on top.

Snack: Killer Green Buzz add Ginger from Whole Foods

I also had my favorite fresh veggie juice from Whole Foods.  It’s costly (large is $9), but it’s a great way to add some veggies and protein from the veggies without having the mess in your own kitchen.

Dinner: Chicken “Noodle” Soup

Chicken noodle soup is something our family loves to eat.  My hubby really likes it on cold days, and the kids love the mild, soothing flavor.  So, I knew that I needed to come up with a Paleo version during the challenge.  I started with this recipe from Skinny Fitalicious and made a few changes.  I didn’t use a crockpot, put I threw this dinner together in less than 30 minutes.  A few tricks made that happen, like I used my pre-baked chicken breast, spaghetti squash, and cooked penne noodles (for the kids).  I threw the aromatics into my dutch oven with some ghee until they became tender.  Then I added the spices and the bone broth.  Then I added the cooked chicken and let that go for about 15 minutes.  To serve, I put the spaghetti squash in the bowls for my hubby and I and the penne and some squash in the bowls for the kids.  Then I covered that with the hot soup.  Super delicious and super easy!!
