Paleo Plan Day 9
The other day I was feeling a bit under the weather, so I didn’t make anything too fancy. I skipped actual breakfast and drank some hot tea and had leftover soup for lunch. Not sure what was going on with me, but one thing’s for sure: my body was fighting something. Anyway, after an unproductive day, I decided I would make dinner as planned. And I’m so glad I did. It was delicious and comforting and actually pretty darn easy.

Dinner: Spinach and Bacon Stuffed Chicken with Garlic Cauliflower Mash
I used this recipe from PaleOMG and followed it almost exactly. The few changes I made: I diced the mushroom soooo small in hopes that my kids and hubby wouldn’t notice them. (I was caught.) And I added some Old Bay Seasoning to the inside and outside of the chicken breasts. I’m having a serious moment with Old Bay. I’m not sure why, I just love the hint of spice and the depth of flavor it adds. Try it, you won’t be disappointed. Something else to know about this recipe, I totally doubted the creator of the recipe on the cooking time. I kept thinking that the breasts were too big (that’s what she said!) and wouldn’t possible cook in a mere 18-20 minutes. Well, I shouldn’t have doubted. It was perfectly cooked per the suggested time.
For the cauliflower mash, I used my favorite frozen caulk rice from Trader Joe’s and put it in a microwave safe dish with garlic, salt, pepper, and about a TB of ghee for 5 minutes. After that I put it in the blender with almost a cup of bone stock. Done and done! This meal was a big win for the whole family, clean plates all around!
