Paleo Plan Day 11
If there is one thing I eat more than anything else it’s soup. Even on the hottest day of summer I’ve been known to order a bowl of soup. The soup that I enjoy most of all is of the Spicy Thai variety. My favorite version is the one at La Bou, I love it so much I made my own copycat version in a crockpot. When I was meal planning I came across a Paleo Thai Chicken Zoodle Soup recipe and I couldn’t wait to try it! All Day I Dream About Food is the genius foodie that came up with this delicious soup.
Lunch: Paleo Thai Chicken Zoodle Soup
Here’s the scoop: I followed All Day I Dream About Food’s recipe exactly up until adding the chicken and the red pepper to the soup. I skipped those steps because I wanted to freeze half of this soup to have another week. For whatever reason I’m not a fan of frozen soup that has meat in it. Plus, I always have baked chicken breasts or thighs on hand that I can add when I defrost the soup. Adding the chicken this way also let’s me control the exact amount chicken in my serving. As for the peppers, I just wanted to add a little extra crunch. So, instead of adding the fish sauce, chicken, and peppers, I added fish sauce and mushrooms because my fave La Bou version has them in it.
I really liked the zoodles in this recipe. They add some bulk to the soup. And, because they’re raw, there’s an added crunch. I bought my veggetini a year ago and I LOVE it. Admittedly, I tend to use it more in the summer than the winter for some reason. Anyway it’s the best $10 kitchen gadget ever. It’s compact enough to fit in a drawer. You can buy one here.
Let me just say that this soup was beyond delicious. I absolutely devoured it and wanted more. The curry and jalepeno smell so amazing when cooking. The coconut milk lends a rich taste that made me feel like I was eating something super rich. This broth alone could make anything taste incredible!! This is another keeper. And the best part is that no one else in my family likes this type of soup so I don’t have to share at all! You all NEED to try this recipe from All Day I Dream About Food.
