7 Meatless Monday Ideas

Are you doing the Meatless Monday thing?  Maybe you’re getting a jumpstart on your summer slim down or maybe you’re like my hubby – just trying to add more vegetables in to your diet.  No matter what you’ve got going on, if you’re like me, you probably need more ideas for family dinner.  Here’s my fave 7 meatless Monday reipes from Pinterest.  I don’t actually do the meatless Monday think on Monday, it really depends on the day of the week, the time I have to prep and cook, and my mood.  These 7 meatless Monday Ideas have really given me some new mealtime material.

That’s Pinteresting…The meal edition.

Happy Thursday!

In this edition on “That’s Pinteresting”, I will be focusing on meal time, more specifically dinner.  Dinner is always a tough time of day.  There are a million things happening and people are melting down.  Mainly me because I’m not prepared and/or not excited by dinner.  And someone may or may not have forgotten to pick up a few things needed for the OG (original gangsta – I took you back, didn’t I?) dinner plan.  And, someone may or may not have ran out of wine.  So now, that particular someone, finds themselves in a messy house and no dinner, really nothing to show for herself for the entire day.  Except the kids,  ahhhh, look at them all alive and everything.  I did that.  I kept them alive.  Winner winner!  Except still no chicken dinner.  Anyway, maybe you can relate, maybe not.  (If you’re part of the “maybe nots” please message me all your secrets.  I mean, like, a detailed timeline.  Like “Life as a Mom and Wife for Dummies” or something.  K-thanks.)

In honor of this lack of planning dinner dilemma, let me introduce you to “Crocktober”.  I had never heard of this term before Tuesday when my friend started her Facebook page Crocktober.  I’m a little in love with it.  It’s an entire FB page dedicated to dinner that cooks itself!  Fantastic!  You all should like her page, I did and I know I will learn something from it too!  I mean how awesome is it that you can put something in a machine in the morning, program it, and it will be ready eight hours later?  Right on!

In today’s all Crocktober Pinterest post, I am beginning with a real life mother of two fantastic children, Natalie.  She lives in El Dorado Hills and she says she’s “not a cooker”  but she was the first to offer me crockpot recipes.  Hmmmm…here she is!

Meet Natalie

Here are her top four go-to crockpot recipes:

Crockpot Chicken and Stuffing

  • 4 chicken breasts
  • 1 pkg stove top stuffing
  • 1/2 cup water
  • 1 can cream of mushroom soup
  • 1 cup chicken broth

Place chicken on bottom of crockpot, pour broth over the top.  Mix together the stuffing, soup, and water and place over the chicken.  Cook on low for 7 hours.  It’s like a thanksgiving feast.

Honey BBQ chicken

  • 4 chicken breasts
  • 1 1/2 cup BBQ sauce
  • 1/4 cup honey
  • 2 teaspoons mustard
  • 1 tablespoon Worcestershire sauce

Put all Ingredients in crockpot and cook on low for 4-5 hours.  I serve it on a French roll with French’s onions.

Chicken Stroganoff

  • 4 chicken breasts
  • 1 can cream of mushroom soup
  • 1 8oz container sour cream
  • 1 envelope Lipton’s onion soup mix

Mix onion soup mix in sour cream container.  Pour mix and cream of mushroom soup over the top of the chicken.  Cook on low for 7 hours.  I usually serve over rice or egg noodles

Salsa Chicken


  • 4 chicken breasts
  • 1 cup salsa
  • 1 package taco seasoning

Pour all contents over the top and cook on low for 6 hours.  I serve them with tortillas as chicken tacos.
